What is Xanthan Gum?
(The following information is from Cargill – Satiaxane™ U xanthan gums)

Xanthan gum is a polysaccharide produced by a biotechnological fermentation process.

Xanthan gum readily dissolves in hot or cold water, is stable in acidic and alkaline solutions and has synergistic interactions with other hydrocolloids such as locust bean gum and guar gum. It is used in a large number of pharmaceutical applications as a suspending agent, an emulsion stabilizer and a foam enhancer in semi-solid, liquid and topical formulations.
